Yukon Gold Potato Gratin

2 lbs. Yukon Gold potatoes, thinly sliced

1 Granny Smith green apple, peeled and grated

3 leeks (white and pale green parts only), halved lengthwise

3 Tbsp. extra-virgin olive oil

1 cup Gruyere cheese, grated

Coarse salt and freshly ground pepper

*Preheat oven to 400 degrees.

Brush 1 Tbsp. olive oil in 9×12” oval baking dish.  Slice leeks 1/8” and separate; set aside.  Spiral potato slices around dish.  Top with grated apple and leeks.  Drizzle 2 Tbsp. olive oil over potatoes.  Season to taste with salt and pepper.

Cover with foil.  Bake 20 minutes.  Remove foil and top with Gruyere cheese.  Re-cover dish loosely with foil.  Bake 20 minutes; remove foil.  Bake another 5 minutes until cheese is lightly browned.
