Quinn’s Santa Maria–Style Grilled Tri-Tip

Ingredients:

  • 2–3 lb tri-tip roast
  • 1 tablespoon kosher salt
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon cayenne pepper
  • Olive oil for brushing

Instructions:

  1. Mix all seasonings together in a small bowl.
  2. Pat tri-tip dry with paper towels, then brush lightly with olive oil. Rub seasoning blend evenly over all sides.
  3. Let sit at room temperature for 30 minutes.
  4. Preheat grill to medium-high and sear tri-tip for 4–5 minutes on each side.
  5. Move to indirect heat, cover, and cook until internal temperature reaches 130°F (medium-rare), about 20–30 minutes depending on thickness.
  6. Rest meat for 10 minutes before slicing against the grain.
  7. Serve with grilled vegetables or a hearty salad.
