Ingredients:
- 2–3 lb tri-tip roast
- 1 tablespoon kosher salt
- 1 tablespoon black pepper
- 1 tablespoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon cayenne pepper
- Olive oil for brushing
Instructions:
- Mix all seasonings together in a small bowl.
- Pat tri-tip dry with paper towels, then brush lightly with olive oil. Rub seasoning blend evenly over all sides.
- Let sit at room temperature for 30 minutes.
- Preheat grill to medium-high and sear tri-tip for 4–5 minutes on each side.
- Move to indirect heat, cover, and cook until internal temperature reaches 130°F (medium-rare), about 20–30 minutes depending on thickness.
- Rest meat for 10 minutes before slicing against the grain.
- Serve with grilled vegetables or a hearty salad.
