Ingredients:
- 4 ears of corn, husked
- ¼ cup mayonnaise
- ¼ cup sour cream
- ½ cup cotija cheese, crumbled
- 1 teaspoon chili powder
- 1 lime, cut into wedges
- Chopped cilantro (optional)
Instructions:
- Grill corn over medium heat, turning occasionally, until charred in spots and cooked through (about 10 minutes).
- In a small bowl, mix together mayonnaise and sour cream.
- Using a brush or spoon, coat each ear of corn with the mayo mixture.
- Sprinkle generously with cotija cheese and chili powder.
- Squeeze lime juice over the top and garnish with cilantro if desired.
- Serve hot and enjoy with lots of napkins!
