December is Egg Nog Month (as well as root veggie month)… and why not learn to make the real stuff? With the holidays upon us, a little indulgence is well deserved!
We love this recipe from Raley’s for an adult’s-only egg nog drink… simply remove the alcohol for a kid-friendly version – its still oh-so-yummy!
Eggnog
1 cup heavy cream
2 tsp. freshly ground nutmeg
7 whole cloves
2 cinnamon sticks
1 cup dark rum
1/2 cup sugar
3 eggs, separated
Prep: 20 minutes, Cook/Steep: 20 minutes, Serves: 6
1. Heat milk and cream in a medium saucepan over medium-low heat. Remove from heat and add nutmeg, cloves and cinnamon sticks; steep for 10 minutes. Strain cream mixture, then return to pan.
2. Add rum and bring heat back to medium-low.
3. Mix sugar and egg yolks in a mixing bowl until pale yellow. Slowly pour hot cream into yolks, continuously mixing vigorously until well incorporated, then pour back into saucepan. Continue to cook over low heat until mixture thickens and coats the back of a spoon. Pour into a bowl resting in an ice bath to cool quickly and stop cooking.
4. Serve in glasses or mugs, then garnish with fresh nutmeg.
