Matthew’s Classic Elote (Mexican Street Corn)

Ingredients:

  • 4 ears of corn, husked
  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • ½ cup cotija cheese, crumbled
  • 1 teaspoon chili powder
  • 1 lime, cut into wedges
  • Chopped cilantro (optional)

Instructions:

  1. Grill corn over medium heat, turning occasionally, until charred in spots and cooked through (about 10 minutes).
  2. In a small bowl, mix together mayonnaise and sour cream.
  3. Using a brush or spoon, coat each ear of corn with the mayo mixture.
  4. Sprinkle generously with cotija cheese and chili powder.
  5. Squeeze lime juice over the top and garnish with cilantro if desired.
  6. Serve hot and enjoy with lots of napkins!
